1 inch ginger, peeled and minced
3 cloves garlic, minced
1 tablespoon olive oil
½ teaspoon garam masala
½ teaspoon turmeric
Dash cumin or ½ teaspoon cumin seeds
Salt to taste (start with ½ teaspoon)
½ onion, chopped
1.5 cups tomato sauce or strained tomatoes
3 cups cooked garbanzo beans (2 cans) Optional: garnish with freshly chopped cilantro
1. Sautee onion, garlic, and ginger in olive oil for 3-4 minutes, until onion begins to look translucent.
2. Add spices and sautee for additional 1-2 minutes, until spices become aromatic.
3. Add strained tomatoes, salt, garbanzo beans and simmer for 5-10 minutes until flavors are combined.
4. Top with cilantro. Enjoy!
